Take out block of tofu from package. Drain liquid and pat block dry with a paper towel. Cut into cubes, toss in a bowl with spices. In a pan, sauté onions and garlic with olive oil. Add tofu until firm on the outside. Add peppers, sauté until roasted, add spinach at the very end for a minute or two.
I served with Quinoa, but brown rice would also be a great addition!
